Oil & Garlic Pasta and Scampi Sauce
Place 2/3 cup "lite" olive oil, 1 28oz. can of diced or crush tomatoes, and the seasoning packet into a saucepan and stir. Over low heat, cook ingredients for three minutes (do not boil). Cook 1lb. pasta (spaghetti or vermicelli) "al dente," drain well. Be sure to shake off excess water. Place pasta into serving bowl. Pour sauce over pasta and mix thoroughly. Sprinkle with Parmesan cheese and serve.
We suggest fixing sauce one day prior to develop full flavor.
Additional Serving Ideas:
- Delicious served chilled as pasta salad.
- Add cooked beef, chicken, or shrimp.
- Serve as an antipasto salad, just add meat or cheeses.
